Herbs

Herbs are the gateway drug of dehydrating. They’re fast (sometimes), fragrant, dramatic, and they make you feel wildly competent even when everything else on the farm is chaos. This page is where I keep track of all my herb experiments – drying times, textures, flavor notes, and how each herb behaves when faced with Texas humidity and my tiny hotbox house.

I’ve dehydrated basil, oregano, thyme, rosemary, sage, catnip, and whatever else I can get my hands on. Some batches turn out perfect. Some turn into crispy confetti. Some take three days because the air here is basically soup.
