Care Guide for Central Texas (Zone 8b)
Sun Requirements
- Baby Bok Choy prefers full sun to partial shade.
- In Texas heat, 4-6 hours of morning sun is ideal.
- Afternoon shade helps prevent bolting.
- Mulch keeps roots cool and reduces moisture loss.
Watering
- Keep soil consistently moist, not soggy.
- Shallow roots dry out quickly in Austin’s heat.
- Water 2-3× weekly, more during hot spells.
- Avoid overhead watering to reduce leaf disease.
Soil & Fertilizer (Organic‑Only)
Use rich, well‑draining soil with plenty of compost.
Bok choy loves nutrient‑dense beds.
Container baby bok choy
- Every 2 weeks fish emulsion and compost tea, alternating
- Monthly worm castings
- Heavy leafy feeder; needs steady nitrogen early on for fast growth
- Containers dry out quickly, so consistent feeding prevents stress and bolting
In‑ground baby bok choy
- Every 2 weeks compost tea and worm castings
- Full‑strength fish emulsion only if growth slows
- In-ground plants often need less feeding because soil retains nutrients better
- Heavy nitrogen is safe for bok choy (unlike root crops), but still avoid overdoing it in extreme heat
Organic Pest Control
Watch for:
- flea beetles
- cabbage worms
- aphids
- slugs
Treat with neem oil or insecticidal soap at dusk.
Use floating row covers for young plants.
Hand‑pick cabbage worms if you see leaf holes.
Encourage ladybugs and lacewings.
Container vs In‑Ground Care
Container:
- Use a 1-2 gal pot with good drainage.
- Shallow containers are fine – roots don’t go deep.
- Terracotta helps prevent soggy soil.
In‑Ground:
- Plant in raised beds or compost‑rich soil.
- Space plants 6-8 inches apart.
- Mulch heavily to keep soil cool.
- Provide afternoon shade during hot spells.
Harvest Instructions
- Harvest whole heads at 4-6 inches tall.
- Or pick outer leaves for cut‑and‑come‑again harvests.
- Bok choy grows fast – check daily once mature.
- Bolting plants are still edible but taste stronger.
Drying & Storage
Store unwashed heads in a perforated bag in the fridge for 5-7 days.
For longer storage:
- chop and freeze
- blanch and freeze
- stir‑fry and freeze for meal prep
Avoid washing until ready to cook.
