Care Guide for Central Texas (Zone 8b)
Sun Requirements
- Rosemary thrives in full sun, including harsh afternoon rays.
- It needs at least 6-8 hours of direct light to stay compact and aromatic.
- If your rosemary looks leggy or pale, it needs more sun.
Watering
Rosemary prefers dry conditions – treat it like a Mediterranean shrub.
- Water lightly 1× per week in beds.
- Containers may need watering every 4-5 days during heat waves.
- Let soil dry out completely between waterings.
- Avoid soggy soil – rosemary hates wet feet.
Signs of underwatering: slight droop (rare).
Signs of overwatering: yellowing leaves, mushy stems, root rot.
Soil & Fertilizer (Organic‑Only)
Use a very well‑draining mix:
- Compost
- Coarse sand
- Perlite
- Small gravel (optional but excellent)
Container rosemary
- Monthly compost tea
- Monthly worm castings (light top‑dress)
- NO fish emulsion
- Rosemary is extremely sensitive to nitrogen
- Heavy nitrogen = floppy stems, reduced aroma, weaker essential oils
- Optional in peak heat (July-August):
- Extra compost tea mid‑month if growth looks tired or soil biology needs support
- Very light feeder; thrives on lean, well‑drained soil even in containers
In‑ground rosemary
- Mediterranean herbs evolved in poor, rocky soils – they simply don’t want nitrogen
- Same as container
- Monthly compost tea
- Monthly worm castings
- No fish emulsion
- In-ground rosemary often needs even less feeding because soil retains nutrients better
Organic Pest Control
Rosemary is naturally pest‑resistant.
Occasional issues:
- Aphids
- Spider mites
- Root rot from overwatering
Organic solutions:
- Neem oil at dusk
- Insecticidal soap for aphids
- Increase airflow to prevent mites
Avoid chemical pesticides – rosemary is used in culinary blends.
Container vs In‑Ground Care
Container Care
- 3-7 gal containers
- Excellent drainage required
- Water lightly
- Perfect for patios and herb racks
In‑Ground Care
- Plant in raised beds or borders
- Loves rocky, sandy soil
- Mulch lightly (not heavily)
- Can grow into a large shrub (3-5 ft)
Warnings
- Overwatering is the #1 killer of rosemary.
- Heavy clay soil must be amended.
- Avoid shade – rosemary becomes leggy and weak.
- Humidity can cause mildew – ensure airflow.
Harvest Instructions
Rosemary is ready when:
- Stems are firm
- Leaves are fragrant
- Plant is at least 68 inches tall
Harvest by snipping stems with scissors.
Best flavor is before flowering, but you can harvest anytime.
Frequent harvesting = bushier growth.
Drying & Storage
Rosemary dries beautifully:
- Hang bundles upside‑down
- Or dry on screens
- Or dehydrate at 95-105°F
Strip leaves once dry and store in airtight jars.
Properly dried rosemary keeps for 6-12 months.
