Care Guide for Central Texas (Zone 8b)


Sun Requirements

  • Beets prefer full sun, but tolerate light afternoon shade during hot spells.
  • Aim for 6-8 hours of sunlight daily.
  • Mulch helps keep roots cool and reduces moisture loss.

Watering

  • Water deeply 2-3× weekly, depending on rainfall.
  • Keep soil evenly moist - dry soil leads to woody roots.
  • Avoid overhead watering to reduce leaf disease.
  • Mulch helps maintain moisture and prevent soil splash.

Soil & Fertilizer (Organic‑Only)

Use loose, well‑draining soil rich in organic matter.
Mix compost into native soil to improve texture and nutrients.

Container beets

  • Monthly alternating diluted fish emulsion (½ strength) and compost tea
  • Monthly worm castings
  • Light‑to‑moderate feeder; avoid heavy nitrogen to prevent leafy tops and small roots
  • Containers dry out faster, so monthly feeding keeps roots sweet, tender, and well‑formed

In‑ground beets

  • Monthly compost tea and worm castings
  • Diluted fish emulsion only if growth is weak
  • In-ground plants often need less feeding because soil retains nutrients better
  • Heavy nitrogen encourages greens over roots

Organic Pest Control

Watch for:

  • leaf miners
  • aphids
  • flea beetles

Treat with neem oil or insecticidal soap at dusk.
Remove damaged leaves to reduce leaf miner spread.
Encourage ladybugs and lacewings.

Container vs In‑Ground Care

Container:  

  • Use a 1-2 gal pot with drainage holes; deeper pots allow better root formation.
  • Terracotta helps prevent soggy roots.

In‑Ground:  

  • Plant in raised beds or loosened soil enriched with compost.
  • Austin clay needs amendment to drain properly.
  • Thin seedlings to 3-4 inches apart for uniform roots.

Harvest Instructions

  • Harvest when beets reach 2-3 inches wide and are smooth and firm.
  • Smaller roots are sweeter and more tender.
  • Pull gently to avoid breaking tops.
  • Beet greens are edible - harvest young for best flavor.

Drying & Storage

Beets store well in the fridge for 2-3 weeks.
For longer storage:

  •  remove greens
  • keep roots in a cool, humid place
  • pickle or ferment for extended use

Avoid washing until ready to eat to extend shelf life.
